Raw Strawberry Shortcake

We have a guest post today, the one and only Ashley of Organically Composed. I asked Ashley a few days ago if she would be featured in a raw food post and I'm glad she agreed. This is her recipe for a sweet summer treat so, follow her Instagram at organically composed.

Summer is just around the corner! And with summer comes an abundance of strawberries. In our backyard, we have a flourishing garden that produces beautiful, red strawberries. What better way to use them than a raw frozen treat?! It’s the perfect snack to cool off during those hot summer days. Fun fact: strawberries have more vitamin C than oranges and they whiten your teeth as well! Also, bananas and dates are full of potassium, cinnamon lowers blood sugar, and figs have lots of great fiber in them. Overall, this dessert is not only sweet and tasty, but it’s beneficial to your health and completely guilt free!


As many strawberries as you desire! I used almost 2 lbs


  • 1 lb of medjool dates
  • 1 cup figs (I used black ones)
  • 1 cup mulberries
  • 1 tsp vanilla extract
  • 1 Tbsp cinnamon (or you can always use more!)


  • 4 frozen bananas
  • 1-2 cups strawberries (frozen or fresh)

Put all the crust ingredients in the food processor and pulse until it becomes a gooey consistency and all ingredients are evenly blended. Press this into the bottom of pie pan. Next, put a layer of chopped strawberries on top of the crust.. Then, put the bananas in the food processor and pulse until smooth and creamy. This may take some time but be patient. It’s worth it, trust me! Scrape the sides and continue pulsing and eventually it will reach a soft serve ice cream consistency. Use half of this mixture as the first banana layer, covering the strawberries and crust. After you’ve evenly spread this, put another layer of strawberries on top. Finally, using the remaining banana mixture, add 1-2 cups of strawberries, turning it pink. Spread this over the strawberries, and put the treat in the freezer for several hours until hard.

When it’s done, remove from freezer and enjoy! Cut up yourself a slice while you enjoy the sun and warmth of summer. Don’t forget to share with family and friends, spreading the love of healthy, delicious foods!
