Almond Butter Bites

Recently I have fallen in love with these energy balls from a local baker Sweet Jimmy's. He does everything gluten free and sometimes vegan. They are the perfect little snack to have for a mid-afternoon break. I wanted to make my own recreation of it for the home. xoxo

Ingredients

  • 1 1/2 cup gluten-free rolled oats
  • 2 tbs coconut oil
  • 2 tbs almond butter
  • 1/4 cup pure maple syrup or any sweetener 
  • 1 tsp vanilla extract
  • 1/2 cup almond flour
  • 1 tbs cacao powder

Directions

In a Vitamix or any blender, blend oats until it becomes a fine flour. And set aside.

In a bowl, combine oil, almond butter, maple syrup, and vanilla and beat with a mixer until smooth. Add almond flour, oat flour and beat again until combined. 

Roll dough into small balls. Place rolled balls onto plate lined with parchment paper. Place in freezer for about 10 minutes. 

To make chocolate drizzle, heat 1 tbs coconut oil with 1 tbs cacao powder in a saucepan. Once melted together take out balls and drizzle chocolate over and place back in, freezer for another 10 minutes. Then enjoy!
